Cách làm sốt chanh dây: Chanh dây cắt đôi, dùng muỗng nạo ruột chanh, cho vào tô.
Trộn sốt chanh dây: Đặt chảo lên bếp đợi nóng chảo, cho bơ vào đun tan chảy sau đó cho nước cốt chanh dây và chút nước lọc vào đun sôi. Nêm muối, đường, nếm đủ vị chua, mặn, ngọt, theo khẩu vị tùy thích. Bột năng pha với 10 ml nước lọc cho vào sốt chanh dây, đun vừa lửa đến khi dung dịch kẹo lại, dẻo quánh thì tắt bếp.
Cá rửa sạch sau đó ướp 1 muỗng muối, 1 muỗng tiêu, 1 muỗng hạt nêm, tỏi băm để 1h cho ngấm gia vị. 50 gr bột chiên giòn pha với 20 ml nước lọc khuấy đều cho sệt lại, nhúng cá cho đều bột cả hai mặt.
Đặt chảo lên bếp, đợi chảo nóng, đổ 1 chén dầu vào nhúng đầu đũa vào thấy sủi tăm là dầu đã già. Cho cá vào chiên mở lửa vừa, để tầm 10p, thỉnh thoảng lật mặt cho cá giòn vàng đều hai mặt.
Gắp cá ra đĩa, chan 1 lớp sốt chanh dây lên cá, sau đó bạn có thể mời gia đình mình cùng thưởng thức.
